I also add one seeded, minced jalapeno, crumbled bacon, and some cayanne to the adult's portions. He thinks I found the original recipe, but this one's even better!!
I really liked this soup. The only thing I changed was adding two cloves of chopped garlic, some fried bacon and Valvetta vs cheddar. I also used frozen cubed hashbrown potatos only because thats what I had. I served this to a group of 6 guys during a fishing trip and it got 12 enthusiastic thumbs up. This soup is so velvetey smooth and delicious.
I did do it alittle different though. I made mine in a crock pot so what I did was: cook the hamburger in a skillet and when that was done I quickly put all the vegetables onions, carrots, celery and potatoes in the skillet with the flour, butter and some of the chicken stock to deglaze.
After a few minutes I put the hamburger, vegetables and chicken stock in the crock and let cook all day. Jennifer Fisher. We absolutely LOVE this recipe. I have made this for my husband and I several times. I make it just as the recipe states and it turns out perfect every time. I use my food processor to chop the veggies and it makes the soup a perfect consistency. You may like to experiment with different chesses and you might want to add alittle more hamburger to it I always double the batch and freeze half for a later date.
It reheats very well. I would give it a 6 if i could Everyone loves this soup. I use shredded cheese instead but I've made it more than once and it is perfect! It makes more than enough for our 3 person family.

Just made this soup today…. Followed the recipe step by step. Once the soup was in bowls, I topped each with a little shredded lettuce and some diced tomato. Added a little more burger experience. I made this multiple times and it is always a hit! Instead of velveeta which I used the first time, I used extra sharp cheddar it was even better!
I saw another comment and was wondering the same how it would turn out with beef broth! I did not have celery so I left it out but I added corn and a small can of diced tomatoes. Also used beef broth instead of chicken and I used parsley instead of basil. Also added a touch of garlic and real bacon bits. Bottom line is use what you have, add what you like, make it your own. It is a favorite. When I made it, I added an extra potato, an extra carrot i shredded them myself , and an extra stalk of celery. Exactly like my family makes it. I made this low carb! Then added 2 cups of shredded cheddar cheese! Tastes great! This recipe was yummy, I even got a thumbs up from my picky husband!! We sprinkled a touch of shredded cheese on top and served with saltines, very filling!! I would say a slalad would go very good with this soup!!
I bought a loaf of everything French bread to dip into it and it was amazing!! I would like to be able to add it all in the morning and then have it ready to eat once I come home to save time. This soup is absolutely delicious and even my picky 4 year old loved it! I also garnished with more shredded cheese and bacon bits and green onions! The leftovers are wonderful! I like my veggies in chunks, so never tried to blend them; they were tender but not mushy! Big hit here, so will definitely be making it again.

I liked your recipe idea! I took out the carrots and celery and add rotel I pureed the rotel and cooked with the cooked hamburger meat and potatoes till potatoes were done.
Then added velveeta and bacon it was very good. Made your cheeseburger soup tonight, but I made it dairy free and gluten free. Used melt sticks for the bitter, and vegan cheddar shreds, almond milk, and great value gluten free flour. I also added nutritional yeast. Think I will cut the flour next time. I have made this soup several tImes…sometimes for home and sometimes for church and i get rave rev every time. I have a question for you this time. I dont have any velveeta, can i sub shreddedcheddar without ruining it?

This is an all around family favorite at my house. Everyone loves it. Thank you for the recipe. This Soup was a huge hit in my house. My husband said it was theBESt cheeseburger Soup he had ever had. My picky two year old ate two bowls full…which is a huge feat! I added a but of dill, because I absolutely live it, some celery flakes, in addition to the diced celery, extra onion and garlic, and a few healthy dashes of Worcestershire.
It is now in OUr Rotation. Do you think it would be possible to do it in the instant pot instead of the crock pot?? Got rave reviews! I did half velveeta and half shredded cheddar as well as adding garlic, Dill, and mustard to it. Wonderful topped with bacon and tomatoes! I made this tonight — the only things I did differently was to use some worcestershire when browning the beef, and a little steak seasoning.
I also used 2 cups of freshly grated sharp cheddar. This soup was delicious! So much so that in this crazy coronavirus time, we have a shortage of potatoes and onions in town…so I bartered 3 lbs of ground beef just to get the needed ingredients to make it.
Top with Italian Bread crumbs also my touch as I love the crispiness of it! Bake and YUM! Sometimes I even put the veggie in I always make more than I need because the kids love the leftovers. My mother would serve a pea casserole peas, mixed with a cream soup, crunchy stuff on top.

My favorite home cooked meal is chicken and dumplings, sweet baby carrots and fried okra When I look at some of the recipes for chicken packets made in aluminum foil packets or the roasted potato packets it never fails to take me back to my mom's kitchen. I remember all of us kids sitting at the kitchen table a big wooden table my father finished opening our chicken packets to put on our plates with a big spoonful of mayo.

Then she makes her gravy not milk gravy and adds back several pieces into the gravy and lets it simmer until the crust of the chicken absorbs the gravy and becomes sticky. My favorite all-time home cooked meal would have to be my mother's fried chicken with mashed potatoes, whatever vegetables that were around at the time, home-made biscuits, and pies apple and pumpkin. My all-time favorite home cooked meal that I myself make is pot roast.
I cook the pot roast separately from the potatoes because my grandson doesn't like the potatoes and carrots mixed in with the meat he'll learn; he's only 13 and I mash the potatoes because that's the way he likes them.
Then I fix corn as well as the carrots, 'cause neither of my grandchildren like carrots at this point. Would love to win the cookbook; it sounds like it will be one of their best ever!
